Did You Know?
If you don't have an ovenproof thermometer, you can test the doneness of a roast by inserting an instant-read thermometer toward the end of the cooking time for about 15 seconds, being careful not to strike bone or fat.  Remove thermometer and continue cooking if you have not reached the desired temperature.

A. Premium oven roasts from the rib and loin typically cost more per pound, but are ideal for holiday entertaining and special occasions. Order the type and size of roast you’d like ahead of time to ensure you get your first choice. For everyday family meals, roasts from the sirloin and round are lean and economical.
