Beef Takes the Fatty Acid Test
Foods that contain fats come in fatty acid packages containing various amounts of saturated fat, monounsaturated fat and polyunsaturated fat. Based on USDA composite data, a 3 oz. serving of beef has less than 2 more grams of total fatty acids* than a 3 oz. serving of skinless chicken meat. And only 1-1/2 grams more saturated fat.
 
Fatty Acids Comparison

Total fatty acids include saturated fat, monounsaturated fat and poly-unsaturated fat. Total fatty acids do not equal the total fat value because the fat value may include some non-fatty acid material, such as
glycerol, phospholipids, and sterols.
