MARGARITA BEEF WITH ORANGE SALSA

Margarita Beef with Orange Salsa --

INGREDIENTS

  1. 1 beef Top Round Steak, cut 1 inch thick (about 1-3/4 pounds)
Marinade:
  1. 2/3 cup frozen orange juice concentrate, defrosted
  2. 1/2 cup tequila
  3. 1/3 cup fresh lime juice
  4. 2 tablespoons chopped fresh ginger
  5. 2 tablespoons olive oil
  6. 2 cloves garlic, minced
  7. 1 teaspoon salt
  8. 1 teaspoon dried oregano
  9. 1/4 teaspoon ground red pepper

INSTRUCTIONS FOR MARGARITA BEEF WITH ORANGE SALSA

  1. Combine marinade ingredients in medium bowl. Place beef steak and marinade in food-safe plastic bag; turn to coat. Close bag securely and marinate in refrigerator 6 hours or as long as overnight, turning occasionally.
  2. Remove steak; discard marinade. Place steak on grid over medium, ash-covered coals. Grill, covered, 12 to 14 minutes (over medium heat on preheated gas grill, 16 to 19 minutes) for medium rare (145°F) doneness, turning occasionally. Do not overcook. Carve into thin slices. Serve with orange salsa.

  • To broil, place steak on rack in broiler pan so surface of beef is 2 to 3 inches from heat. Broil 17 to 18 minutes for medium rare doneness, turning once.
