GRECIAN BEEF STEAK SALAD & PITA CHIPS

Grecian Beef Steak Salad & Pita Chips --

INGREDIENTS

  1. 2 beef Strip Steaks Boneless, cut 1 inch thick (about 1-1/4 pounds)
  2. 1/2 cup plus 1 tablespoon prepared Italian dressing
  3. 3 tablespoons finely crumbled feta or grated Parmesan cheese
  4. 3 tablespoons finely chopped Greek or ripe olives
  5. 2 whole pita breads
  6. 1 bag (10 ounces) mixed salad greens (about 8 cups)
  7. 1 small cucumber, cut lengthwise in half, then sliced crosswise
  8. 1/4 medium red onion, cut into thin wedges
Seasoning:
  1. 1 teaspoon garlic powder
  2. 1 teaspoon dried oregano leaves, crushed
  3. 1/4 teaspoon pepper

INSTRUCTIONS FOR GRECIAN BEEF STEAK SALAD & PITA CHIPS

  1. Heat oven to 350°F. Combine seasoning ingredients. Press 1-1/2 teaspoons seasoning onto beef steaks. Combine remaining seasoning, dressing, cheese and olives in small bowl.
  2. Split pita breads in half. Brush inner surfaces of pitas with 3 tablespoons of the dressing mixture; cut each half into 8 wedges. Place wedges, cut side up, on baking sheet. Bake in 350°F oven 12 to 15 minutes or until lightly browned.
  3. Meanwhile, heat large nonstick skillet over medium heat until hot. Place steaks in skillet; cook 12 to 15 minutes for medium rare (145°F) to medium doneness (160°F), turning occasionally.
  4. Combine salad greens, cucumber, onion and remaining dressing mixture in large bowl; toss to coat. Carve steaks into thin slices; season with 1/2 teaspoon salt. Add beef to salad; toss. Serve with pita chips.
