CORN RELISH

  • Total Recipe Time: 15 to 20 minutes
  • Makes 2 cups.

INGREDIENTS

  1. 1 cup frozen corn, thawed
  2. 1/2 cup chopped seeded tomatoes
  3. 1/2 cup chopped seeded cucumber
  4. 3 tablespoons thinly sliced green onions
  5. 2 tablespoons apple cider vinegar
  6. 2 teaspoons olive oil
  7. 1 teaspoon sugar
  8. 1/2 teaspoon ground cumin
  9. 1/4 teaspoon salt

INSTRUCTIONS FOR CORN RELISH

  1. Combine all ingredients in medium bowl.  Cover and refrigerate at least 1 hour to allow flavors to blend.  Serve cold.

  • You may use cooked fresh corn instead of frozen corn; omit sugar when using fresh corn.  

    Corn relish may be prepared a day ahead.
