Mac N Cheese Bites

These Mac N Cheese bites from Chef Lamar Moore are compliment with a Beef Bacon Jam.


Mac and Cheese: 

  • 2 cups milk 
  • 1 cup cream 
  • 1 cup cheddar cheese 
  • 1 cup mozzarella cheese 
  • 1 cup parmesan 
  • 1 pound cavatappi pasta

Beef Bacon Jam:

  • 1/2 cup diced beef bacon
  • 1/4 cup brown sugar 
  • 1/3 cup bourbon 
  • 1 shallot, minced 
  • 1/3 cup honey 
  • 1/4 cup beef stock 
  • 1/2 cup sriracha  
  • 3 ounces garlic, chopped 
  • 2 small onions, diced 
  • 4 small jalapenos, diced


Mac and Cheese:

  1. Cook pasta 3-5 minutes in salted water.  Make cheese sauce by bringing milk and cream to a boil. Turn off heat and begin to add cheese.  Add pasta and stir until incorporated. Remove from pot and cool in a semi-shallow pan in the freezer overnight  
  2. Cut Mac n cheese into squares.   3 step bread (Seasoned flour, eggs bread crumbs). Heat vegetable oil over medium high heat. Fry Mac n cheese oil until golden brown. Remove from oil and season with salt.  

Beef Bacon Jam:

  1. Render beef bacon over medium heat until crispy. Remove half of fat. Sauté shallots, onions and garlic and cook until translucent.  Add honey and cook until reduced by half.   
  2. Add brown sugar and cook until dissolved.  Deglaze with bourbon, and burn all alcohol.  Add remaining ingredients, stirring over medium heat until dissolved, about one hour.
