MUSTARD PEPPER RUB FOR BEEF ROASTS

INGREDIENTS

  1. 1/4 cup chopped fresh parsley
  2. 2 tablespoons Dijon-style mustard
  3. 1 tablespoon mixed black, white, green and pink peppercorns or black peppercorns, cracked
  4. 2 large cloves garlic, minced
  5. 1 teaspoon salt

INSTRUCTIONS FOR MUSTARD PEPPER RUB FOR BEEF ROASTS

  1. Combine rub ingredients in small bowl; press evenly onto all surfaces of beef roast.
  2. Place roast, fat-side up, in shallow roasting pan. Insert ovenproof meat thermometer so tip is centered in thickest part of beef, not resting in fat or touching bone. Do not add water or cover. Roast according to chart for medium rare (145°F) to medium (160°F) doneness.
