INGREDIENTS

  1. 2 beef Sirloin Tip Center Steaks, cut 1 inch thick (about 8 ounces each)
  2. Salt and pepper
Ancho Chili Rub:
  1. 1 tablespoon ground ancho chili powder
  2. 3 cloves garlic, minced
  3. 1-1/2 teaspoons dried oregano leaves
  4. 1 teaspoon unsweetened cocoa powder
  5. 1 teaspoon freshly grated orange peel
  6. 1/2 teaspoon ground cinnamon

INSTRUCTIONS FOR GRILLED BEEF STEAKS WITH ANCHO CHILI RUB

  1. Combine rub ingredients; press evenly onto beef steaks.
  2. Place steaks on grid over medium, ash-covered coals. Grill, covered, 11 to 13 minutes (over medium heat on preheated gas grill, covered, 13 to 15 minutes) for medium rare (145°F) doneness, turning once; do not overcook. Season with salt and pepper, as desired.
