Smoked Beef Sausage & Potato Chowder

Ingredients

  1. 1 pound fully-cooked smoked beef sausage, thinly sliced
  2. 1 package (5 ounces) cheesy scalloped potatoes
  3. 2 cups frozen mixed vegetables
  4. 1 can (14-1/2 ounces) ready-to-serve onion-flavored beef broth
  5. 1 cup water
  6. 2 cups milk
  7. 2 tablespoons chopped fresh parsley
  8. 1/4 teaspoon black pepper
  9. Fresh parsley sprigs

Instructions

  1. HeatĀ stockpot over medium-high heat until hot. Add sausage; cook and stir 5 minutes or until browned. Pour off drippings.
  2. Add potatoes from package, mixed vegetables, broth and water; bring to a boil. Reduce heat; whisk in sauce mix until blended. Cover and simmer over low heat 12 minutes or until potatoes are tender, stirring occasionally.
  3. Stir in milk; cook, uncovered, over medium heat 1 minute or just until heated through. (Do not boil.) Remove from heat; stir in chopped parsley and pepper. Garnish with parsley sprigs.
