Grilled Beef Sirloin & Farmer

INGREDIENTS

  1. 1 beef Top Sirloin Steak Boneless, cut 1 inch thick
  2. Salt (optional)
Mustard-Thyme Glaze:
  1. 2 tablespoons Dijon-style mustard
  2. 2 tablespoons apricot preserves
  3. 1 teaspoon lemon juice
  4. 1/2 teaspoon dried thyme leaves
  5. 1/4 teaspoon pepper
Vegetable Skewers:
  1. 1 medium zucchini squash, cut diagonally into 1/2-inch thick slices
  2. 1 medium yellow squash, cut diagonally into 1/2-inch thick slices
  3. 1 small red onion, cut into 1/2-inch thick wedges
  4. 8 medium mushrooms (about 1/4 pound)
  5. 1 tablespoon Dijon-style mustard
  6. 1 tablespoon olive oil

INSTRUCTIONS FOR GRILLED SIRLOIN & FARMER'S MARKET SKEWERS

  1. In 1-cup glass measure, combine glaze ingredients. Microwave on HIGH 45 seconds or until preserves are melted, stirring once. Brush glaze evenly over both sides of beef steak.
  2. Alternately thread vegetables onto each of four 12-inch metal skewers, arranging zucchini and squash slices lengthwise on skewers. Combine mustard and oil; brush evenly over vegetables.
  3. Place steak and vegetable skewers on grid over medium coals. Grill 16 to 21 minutes or until steak is medium-rare to medium doneness and vegetables are tender, turning steak and vegetables once.
  4. Trim fat from steak. Carve steak crosswise into slices; season with salt, if desired. Serve beef with vegetables.
