CHIPOTLE BLACK BEAN BEEF STEW

Chipotle Black Bean Beef Stew --

INGREDIENTS

  1. 3/4 pound Ground Beef (95% lean)
  2. 1 medium sweet potatoes, peeled
  3. 1 medium onion, chopped
  4. 1 can (28 ounces) crushed tomatoes, undrained
  5. 2 cans (15 ounces each) black beans, drained, rinsed
  6. 2 chipotle peppers in adobo sauce, minced
  7. 1/4 cup chopped fresh cilantro
  8. 2 tablespoons fresh lime juice
  9. Lime wedges (optional)

INSTRUCTIONS FOR CHIPOTLE BLACK BEAN BEEF STEW

  1. Pierce sweet potato with fork and place on paper towel. Microwave on HIGH 4 to 6 minutes or until tender. Cool slightly; cut into 1/2-inch cubes.
  2. Heat large nonstick skillet over medium heat until hot. Add Ground Beef and onion; cook 8 to 10 minutes, breaking beef up into 3/4-inch crumbles, stirring occasionally. Remove drippings
  3. Add tomatoes, black beans and chipotle peppers. Bring mixture to boil. Reduce heat; simmer, uncovered, 15 minutes. Add sweet potato; cook 5 minutes or until heated through, stirring once.
  4. Sprinkle with cilantro and lime juice. Garnish with lime wedges, if desired.

  • Cooking times are for fresh or thoroughly thawed Ground Beef. Ground Beef should be cooked to an internal temperature of 160ºF. Color is not a reliable indicator of Ground Beef doneness.

This was pretty good. Calling it a stew is a little off in my honest opinion. Closer to chili instead of stew in my honest opinion.
