Beef Borek

Pitmaster Erica Roby created these tasty, Mediterranean pastries filled with ground beef filling seasoned with spices, between layers of flaky phyllo dough.

Ingredients:

  • 1 pound Ground Beef (93% lean or leaner)
  • 1 small onion, finely chopped
  • 4 garlic cloves, minced, divided
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1/2 cup chopped parsley (optional)
  • 10 sheets phyllo dough
  • 1/2 cup melted butter or olive oil
  • 1 egg
  • Sesame seeds for garnish (optional)

COOKING:

  1. Heat large skillet over medium heat. Add onion and half minced garlic, sauté 2 to 3 minutes or until softened.
  2. Add Ground Beef; cook 6 to 8 minutes, breaking up beef into small crumbles and stirring occasionally. Stir in chili powder, cumin, paprika, salt, and pepper. Cook an additional 2 to 3 minutes or until the spices are toasted and fragrant.
  3. Stir in chopped parsley, if desired. Remove from heat; cool filling slightly.
  4. Preheat oven to 375°F. On a flat work surface lay out sheet of phyllo dough; brush lightly with melted butter or oil. Place another sheet on top; brush with butter. Repeat with remaining dough until you have 5 layers.
  5. Spoon half of beef mixture along longer edge of the dough, leaving 1/2-inch space at edges.
  6. Roll dough over filling tightly, tucking in edges. Repeat with the remaining phyllo sheets and beef filling.
  7. Place rolls on baking sheet lined with parchment paper. Stir together egg and remaining garlic. Brush tops of dough and sprinkle with sesame seeds, if desired. Bake 25 to 30 minutes, or until golden brown and crispy. Cool slightly before slicing.
  8. Serve warm with yogurt or a salad.
