Beef Bulgogi Bowls

This speedy recipe from Pitmaster Erica Roby is perfect for weeknights or game day. Strips of marinated beef served with veggies and kimchi fried rice.

Ingredients:

  • 1 pound thinly sliced beef (ribeye or sirloin)
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 2 tablespoons sugar
  • 2 tablespoons sesame oil
  • 1 tablespoon grated ginger
  • 2 tablespoons vegetable oil
  • 1/2 small onion, thinly sliced
  • 1 tablespoon gochujang
  • 1 cup kimchi, chopped
  • 2 cups cold cooked rice
  • 2 eggs, beaten
  • 2 green onions, chopped
  • Sesame seeds (optional)

COOKING:

  1. In a bowl, combine soy sauce, garlic, sugar, sesame oil and ginger. Add beef and mix well; cover and marinate 15 minutes.
  2. Heat a large skillet or wok over medium high heat. Add half of vegetable oil.
  3. Add marinated beef and onions and cook 3 to 4 minutes or until beef reaches an internal temperature for medium rare (145°F), stirring occasionally. Remove beef from skillet; set aside.
  4. In same skillet, add remaining 1 tablespoon vegetable oil. Add kimchi and cook for 2 minutes until fragrant. Stir cooked rice into skillet, stirring to combine with kimchi. Stir in gochujang or red pepper flakes. Push rice to one side of skillet add eggs into empty space. Cook 30 seconds to 1 minute or just until cooked through, stirring occasionally. Stir into rice mixture.
  5. Return cooked beef and onions back to skillet. Cook and stir about 1 minute or until heated through.
  6. Sprinkle with green onions and sesame seeds before serving.
