Beef Satay with Peanut Sauce

Beef satay is served with a flavorful sauce from an everyday pantry staple (peanut butter) to boost the flavor of an affordable beef cut.

Ingredients

  • 1 beef Flank or Flat Iron steak, (1-1/2 pounds), sliced into 1/4-inch thick slices
  • 2 tablespoons minced garlic
  • 1 tablespoon minced ginger
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1 tablespoon brown sugar
  • 1/2 teaspoon Kosher salt or to taste
  • 2 tablespoons lime juice
  • 1/4 cup coconut cream
  • 1-1/2 cups jasmine rice
  • 2-1/4 cups water
  • 1 tablespoon neutral oil or beef tallow, plus more for grilling
  • Chili garlic sauce and fresh cilantro, for garnish

Peanut Sauce: 

  • 3/4 cup creamy peanut butter
  • 2 to 4 tablespoons hot water (to loosen)
  • 2 tablespoons soy sauce
  • 1 tablespoon pre-minced garlic
  • 2 tablespoons sugar
  • 2 tablespoons lime juice
  • Kosher salt, to taste

Cooking

  1. In a bowl, mix garlic, ginger, coriander, cumin, turmeric, sugar, salt, lime juice, and coconut cream. Add beef, toss to coat, cover, and refrigerate 2 hours or overnight.
  2. Soak wooden skewers in water for 30 minutes. Thread beef onto skewers.
  3. Rinse rice until water runs clear. Combine with water in a pot, bring to a boil, reduce to low, cover, and cook 15 minutes. Remove from heat and steam, covered, 5 minutes.
  4. Whisk peanut butter, hot water, soy sauce, garlic, sugar, and lime juice until smooth. Add more water as needed for a pourable consistency. Season with salt.
  5. Heat cast-iron to medium-high. Add in a bit of neutral oil or beef tallow. Sear skewers 2 to 3 minutes per side until cooked through and lightly charred.
  6. Serve over rice with peanut sauce. Garnish with chili garlic sauce and cilantro.
  7. Adam's Note: A drizzle of chili garlic sauce – a chunky, spicy Indonesian chili sauce – on top of your skewers adds a great punch of flavor and heat.
