Sweet Potato Chili Skillet Ingredients

  • 1 pound Ground Beef (93% lean or leaner)

Seasoning Mix:

  • 2 tablespoons chili powder
  • 2 teaspoons cumin
  • 2 teaspoons salt
  • 1 teaspoon pepper 
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Chili:

  • 1 tablespoon avocado oil
  • 1 red bell pepper, chopped
  • 1/2 small red onion, chopped
  • 3 cloves garlic, minced
  • 1 can (15 ounces) crushed fire-roasted tomatoes
  • 1 can (15 ounces) kidney beans, rinsed, drained
  • 1 cup corn
  • 1 tablespoon tomato paste
  • 1-1/2 cups beef stock
  • 1 medium sweet potato, peeled, cut into 1-inch pieces
  • 1 block (8 ounce) sharp Cheddar cheese, shredded
  • Sour cream, avocado, green onion, jalapeño, corn chips and hot sauce (optional)

Cooking

  1. Combine seasoning mix ingredients in small bowl; set aside.
  2. Heat oil in large oven-safe nonstick saucepan over medium heat until hot. Add bell pepper and onion; cook 3 to 4 minutes, stirring occasionally, until softened. Add garlic; cook 1 minute or until fragrant.
  3. Add Ground Beef and half of seasoning mixture to saucepan. Cook 7 to 10 minutes, breaking into 3/4-inch crumbles and stirring occasionally.
  4. Stir in tomatoes, beans, corn, tomato paste and beef stock; bring to a boil. Add sweet potatoes and remaining seasoning mix, stirring well.
  5. Reduce heat; cover and simmer 10 to 13 minutes, or until sweet potatoes are fork-tender.
  6. Uncover; sprinkle with shredded cheese. Transfer to oven; broil 2 to 3 minutes or until cheese melts and begins to crisp.
  7. Serve with toppings, as desired. Enjoy!
