Summer Beef Cups

Pitmaster Erica Roby shares these easy ground beef lettuce cups with garlic , ginger, and served with a tasty fish sauce.

Cooking

  1. Cook the beef. Heat oil in a skillet, cook garlic + ginger briefly, then add beef. Brown until just cooked.
    Grill Option: Smoke the ground beef on 225°F for pellet grills using Oak or Pecan wood until internal temperature of 165°F.
  2. Mix the sauce. Stir lime juice, fish sauce, sugar, and water until balanced.
  3. Prep cups. Keep everything raw, crisp, and colorful.
  4. Assemble. In each lettuce cup:
    • Spoon warm beef
    • Add carrots and cucumber
    • Pile herbs on top
    • Drizzle sauce
    • Sprinkle nuts
