Tri-Tip Street Corn Bowl

Lauren Twigge, R.D. shares steak bowls that are the ultimate summer BBQ dinner—packed with flavor, high in protein and perfect for the whole family.

Ingredients

  • 1 (2 pound) Beef Tri-Tip Roast, trimmed
  • 3 tablespoons blackened seasoning (or seasoning of choice)
  • 4 ears fresh corn, husks and silks removed
  • 2 tablespoons butter, softened
  • 1 tablespoon taco seasoning
  • 1 bunch cilantro, chopped and divided
  • 1 large jalapeno, seeded and chopped
  • 1/2 small red onion, finely chopped
  • 2 cups cooked jasmine rice

Avocado Dressing:

  • 1 lime, juiced
  • 1 large avocado
  • 1/2 cup low-fat cottage cheese
  • 1/2 cup milk
  • 1 teaspoon chili lime seasoning
  • 1/2 teaspoon chili powder
  • 1/2 cup Cotija cheese


Cooking

  1. Pat Tri-Tip dry with paper towels; sprinkle blackened seasoning evenly on both sides, patting the rub into the tri-tip so it sticks.
  2. Rub each piece of corn with butter and season with taco seasoning.
  3. Place roast in center of grid over medium, ash-covered coals or medium heat on preheated gas grill. Grill roast, covered 25 to 45 minutes for medium rare (145°F), flipping halfway through.
  4. Meanwhile, about halfway through grilling, place corn on grill; grill 10 to 15 minutes or until kernels have softened and have grill marks. Remove from grill; set aside to cool.
  5. Once roast has reached appropriate internal temperature, sear on high heat for 1 minute on each side. Remove from heat; cover loosely with foil. Rest 10 minutes.
  6. Add 1/4 cup cilantro, lime juice, cottage cheese, avocado, milk Tajjin and chili powder to blender insert. Blend until smooth. Adjust to taste.
  7. Carefully cut cooked corn kernels off the cob; place in large mixing bowl. Add jalapeno, red onion, 1/4 cup cilantro and 1/2 cup prepared avocado dressing. Stir to combine.
  8. Slice roast against the grain into thin strips or small pieces.
  9. To assemble, place 1/2 cup cooked jasmine rice in bowl. Add corn mixture, sliced roast and top with a sprinkle of Cotija cheese, cilantro and tajin. Add additional avocado dressing, as desired. Enjoy!
